METHOD
Paddle the butter, peanut butter, brown sugar, and vanilla extract until combined, scraping halfway through.
Add the applesauce, mix until combined.
Whisk together the flour, baking powder, baking soda, salt and oats. Add to the mixing bowl, paddle until almost combined.
Add the peanuts, mix until just combined.
Scoop into 85-90g balls, chill overnight.
