Vanilla Diplomat

YIELD: 1.5 QT
MIXER SIZE: 5 QT

METHOD

  1. Use fresh buttercream, or rewhip cold buttercream by torching the outside of a stand mixer until light and fluffy. 

  2. Add cold vanilla pastry cream, and paddle on high just until incorporated, 5-10 seconds.


NOTES

  • The diplomat will break if over whipped.

  • If using in a cake, pipe buttercream around the edges to keep the diplomat in place.

  • This is a great whipped cream substitute.

  • If you want a filling that is richer and can hold its shape more when piping, use “vanilla pastry cream for cakes” recipe instead of “vanilla pastry cream”.

  • This does not rewhip well, so make only what you need.

  • This can freeze once assembled in cakes.
