Spiced Walnut Snowballs

YIELD: 60 Cookies at 12g Each
MIXER: 5 Qt.

METHOD

1. Roughly chop the walnuts into quarters. Toast at 325°F low fan for 6 minutes until lightly toasted.

2. Paddle the sugar, salt, vanilla bean powder, and butter on hight speed until light and fluffy, scraping once or twice during the process.

3. Whisk together the flour and spices.

4. Add the flour and walnuts, mix until just combined.

5. Portion into 12g balls, chill overnight or freeze until needed.

BAKING

· Bake the cookies cold from the fridge · 300°F · low fan · 10 mins, 6 mins

· When the cookies are barely warm but not hot, coat evenly in Confectioner's Sugar.

· Once the cookies are cooled completely, do a second coating of Confectioner’s Sugar.

 

NOTES

· These cookies can be made larger if desired.

· Bake times and temperatures are a suggestion.
